Cozy & Delicious Red Lentil Cream Soup
Soup is the best comfort food and they don’t need meat to be hearty and delicious. For those days when we just feel like staying at home with the fluffy blanket and don’t think about spending hours in the kitchen, this recipe is the perfect one to use. In addition, it will keep you satiated for a long time. Vegan, gluten-free and low fat, this creamy soup can be enjoyed all year round, anytime your belly asks for a beautiful bowl of nutritious soup.
I try to cook red lentils at home at least once per week. Most of the time I make it in the traditional way with red onion, celery, olive oil, tomato sauce, and some Bulgarian spices to bring up the best of taste. However, since the peeled red lentils cook so fast, easy, and become so soft, the idea of making a cream soup crossed my mind a few times. This recipe is pure improvisation. But it turned out to be tasty and satisfying. Check it out below!

Cozy & Delicious Red Lentil Cream Soup
Ingredients
- 1 cup peeled red lentils
- 1 big carrot
- 1 yellow onion
- 1 big yellow potato
- 3 garlic cloves
- 1 piece of celery root – thumb size
- 1 tsp turmeric
- 1 tsp ground cumin
- 2 bay leaves
- Salt and pepper to taste
- Extra virgin olive oil
Instructions
- Chop the potatoes, carrot, celery root, onion, and garlic, add them to a medium cooking pot, together with a little bit of water and olive oil. Cook until soft.Meanwhile, rinse the red lentils. I try to always soak it for a few hours prior to cooking too. Once the vegetables are soft, add the red lentils, mix everything together and add the rest of the ingredients – turmeric, ground cumin, bay leaves, salt, and pepper.Add more water to cover the ingredients and cook until the lentil is done. Take away from the stove and let it cool off. Then, take out the bay leaves and blend the soup to become a creamy deliciousness.I love to sprinkle some fresh parsley on top and add some raw sesame/pumpkin seeds too.
What to serve with this soup:
- Salad! I would always go for a fresh leafy salad right before starting with my soup. Give your eyes something colorful to add up to the abundance of this cozy soup.
- Gluten-free pumpkin seed mini crackers which I buy here in Prague. Or maybe even my chickpeas-quinoa crackers!
