Creamy Almond Rice Pudding
In my country (Bulgaria), we have a traditional dessert that is made with rice and milk, and we call it rice pudding. Today I will show you an improved recipe with rice and milk again but made healthy, high in protein and ideal as a post-workout meal or a hearty breakfast. If you like to have something warm and filling in the morning, this one is an option.
We will be using simple ingredients that can be found in any store. The morning oat porridge can be easily substituted with this creamy and delicious almond butter pudding. It is also packed with fibre, protein, healthy fats and gives essential vitamins and minerals to our body. Kids will love it too!
For this recipe I use coconut yogurt as it’s my favorite plant-based yogurt but if you cannot find exactly coconut one, feel free to use another type of vegan yogurt that you love. The recipe also calls for almond butter as it’s super yummy and creamy, but if you like to enjoy the hazelnut butter more, use it instead.

Creamy Almond Rice Pudding
Ingredients
- 300 g cooked white rice
- 50 g almond butter
- 80 ml maple syrup
- 1 tsp cinnamon
- 5 tbsp coconut yogurt (or another type of plant-based yogurt)
- 10 g almond flakes
- 20 g organic dark chocolate, grated
Instructions
- 1. Cook the rice according to packet instructions. You can use white rice or any other similar type that you desire.2. Take a saucepan and add the cooked rice, almond milk, almond butter, maple syrup and cinnamon and bring to the boil. Stir carefully until the almond butter fully dissolves. Lower the heat and continue to cook for another 3-4 minutes until thick and creamy.3. Take the pudding off the stove and using a spoon, stir through 5 tbsp coconut yoghurt.5. Pour the almond rice pudding into serving bowls, top with some almond flakes and grated dark chocolate. Enjoy warm.
I personally like it warm as it’s more creamy and the rice is still “fresh” but if you leave it in fridge overnight, I promise that it’s delicious on the next day too. I even add some more coconut yogurt on top and enjoy it as an afternoon snack. It’s actually one of the most filling snacks I’ve ever had as you won’t be hungry for at least a coupe of hours.
