Gluten-Free & Vegan Mini Pizzas


Everyone loves pizza. I remember the feeling of melting cheese and crispy dough. And the heavy feeling after consuming it…

Since I started re-programming my lifestyle, I read tons of books and watched multiple docu-series about gluten, I decided to experiment and remove it from my diet. I have never had any gluten-related health conditions but I knew that with time, human body gets negatively affected by it. One doesn’t have to be allergic to gluten in order to stay away from it. Or maybe just avoid it and have it occasionally.



So, here I come with homemade vegan & gluten-free mini pizzas recipe. No gluten, all vegan but so delicious and filling. You won’t have this heavy feeling after dinner if you make these pizzas, I promise.

I use a bread-making machine and literally spend time only to form the pizzas and add the toppings. It’s super easy and time-saving. Kids love the taste too! Let’s see the recipe.


Gluten-Free & Vegan Mini Pizzas

These are yummy even on the next day. Even cold. The dough and the vegan cheese don't leave this heavy feeling after dinner and the combination between mushrooms, pickles and melted cheese is just... delicious.

  • 400 g rice flour
  • 400 g corn flour
  • 600 ml water
  • 1 tsp pink salt
  • 1 tsp dried yeast
  • 2 tbsp olive oil
  • 250 g Lutenica (Bulgarian spread similar to ayvar)
  • 60 g white button mushrooms finely cut
  • 100 g pickles finely chopped
  • 15 green olives finely cut
  • vegan cheese to melt


  • I use a bread-making machine and literally spend time only to form the pizzas and add the toppings. You can use bread machine too or make the dough using a spoon and your hands. For the dough use: 400 g rice flour, 400 g corn flour, 600 ml water, 1 tsp pink salt, 1 tsp dried yeast, 2 tbsp olive oil.
    Once the dough is ready, leave it for 2 hours in room temperature, covered with a towel. It almost doubles its size.
    Once the dough is ready, form little balls and then form the base for your mini pizzas. Add the toppings and sprinkle as much vegan cheese as you desire. Feel free to add more or different ingredients. These are the ones we love at home.
    Bake on parchment paper until a toothpick comes out dry. Serve and enjoy!

Feel free to experiment with the toppings and adjust to taste according to your preferences.

Serve warm and enjoy. If some pizzas are left, do not worry. They test amazing on the next day (and cold) too.
